^ The most viable option based on your requirement would be a gigabit capable SBC / old PC + extra pcie gigabit ethernet cards i think. I mean, support is virtually endless with pfsense / linux and you can leave the wireless stuff to any access point hardwares out there (like that ubiquiti ap).

^ We have been using it at work too, moved to chef lately as our infrastructure grows. I'm still personally using it for some stuff (mostly personal projects) like setup new vps, fail2ban, wireguard and the likes.
