HK Talk
Downloading now as I am finished with my setting up my new Slackware-Current install, removing pulseaudio and rebuilding alsa packages to be pulse free and then building new SBo's for everything I need rather than wait for SlackBuilds to be updated. A few more minutes and then it's time to take a trip down memory lane. Thanks MB!!
OT: Hey Rho, I lived in HK for 4 years and Macau for 4 years. I taught English and Aikido in HK and worked for casino king Stanley Ho as a personal body guard from 1994-1997. Had to leave the job after a shoot-out in Apollo Karaoke. Seems I shot a member of 14K in the shoulder after he shot at me first. Oops! Had to leave quickly as they would send someone on a motorcycle to kill me (they did this to a few Portuguese judges and jail guards). After the HK transition on July 1, 1997, both 14K and Soi Fong gang leaders got thrown in jail and there was a big power struggle especially amongst the big brothers (dai lo). Anyways I had to leave at about 4 am on Stanley Ho's jet and GTFO quickly. Ho replaced me with 20 Gurkhas from HK as they were unemployed at the time and my friends including (my big brother) Sagat the World Champion Muay Thai Boxer (they used his name for Streetfighter) joked that it took 20 Gurkhas to replace me. Not really true as Ho beefed up security at all his casinos.

I'm LMFAO!! You got me good!! The fight began with one of the very drunk 14K junior leaders telling me to fuck off and get out of the karaoke bar because this is a chinese area and not for gwai lo. I just wanted to relax with some of the Vancouver strippers we employed at the Jai Alai and I was tired after just arriving from Italy with the boss and in no mood for crap so I called him sai bun jow (little dick) and that he couldn't get laid even if he paid one of the off duty Thai prostitutes there. Things got out of hand and I had to leave Macau abruptly.

@archvortex: damn, what you describe here is probably an entire part of the HK/Macau world i don't know shit about. this city, to me, feels like the safest place on earth. now you talk about guns? i mean, sure, i know there is such a thing as Chinese maffia, and i'm sure they are there in HK, but fucking nothing criminal seems to happen in this city man. anyway, good story :)

Go and hang out in Wanchai at night. No, maybe it's better you don't. Or go across the border to Shenzhen and go to the barbershops. LOL
When I lived in HK I didn't know shit but could occasionally spot a gang member. It is safe there so don't worry. You'll never see the seedy underbelly of HK unless you really go looking for it. Macau used to be Disneyland for men and now it's a family destination.
Bacon, I used to order a kilo of cha siu (char siu in Mandarin) at a time and get one small bowl of rice. Man, I miss dim sum and doing yam cha all day just eating and drinking tea or beer. The babi guling here is just not the same but in East Java where I also live part of the year, there's an awesome BBQ pork ribs place and beside it you can get dog, monkey, bat, etc.
I think a new thread should be opened for all this OT stuff ;)

Ha! I learned something new. I always thought char siu was Mandarin but it was some colonial misspelling of cha siu. I should have realized that shao is the Mandarin equivalent of siu. I speak Cantonese pretty fluently, but only a little Mandarin and my Hokkien (especially Penang Hokkien) is not too bad. I can read and write in traditional but not modern characters.
I don't eat the red stuff. Don't know why they do it. There are enough original version natural looking ones around to eat.

@arch: well i've been out in Wan Chai at night. i know this is where all the prostitutes are - even talked to two of them, they were superfriendly, very nice conversations. noticed that you rarely see black people in HK except for Wan Chai at night when the hookers are out. so their purpose seemed clear to me. Other than that, the worst I've seen there is annoyingly drunk white people, and ugly white dudes with way too pretty ladies. Went to Amazonia the other night, the place was full of them. Great band though, doing 90s rock covers - wonderful :)
I thought Mong Kok was the underbelly, to be honest. Isn't that where you go to buy drugs - or so i've been told ;)

This is because one of the main conservation or curing methods in China is using rock sugar [2], the other one is hot smoke [3]. It's a huge difference if you use the cold smoke method like in the Western world, where meat is smoked for hours indirectly, or if you use hot smoke directly that dries the meat out.
